Pre-dinner drinks are a sociable moment to be enjoyed and shared.
In 2007, the Puget range developed a selection of special spreads.
These consist of 5 tasty recipes specially developed by a top chef: black tapenade, green tapenade, aubergine caviar, yellow and red pepper conserve and dried tomato conserve. These can be used for appetizers and for cooking.
“Black tapenade”: this consists of crushed very ripe black olives, blended with finely chopped capers, a few anchovies and Puget olive oil to bring out the fruity olive flavour.
“Green tapenade”: this consists of crushed green olives, blended with chopped capers and anchovies. A drizzle of Puget olive oil and chopped basil bring out the fresh, fruity flavour of this delicious mixture.
“Aubergine caviar”: this consists of lightly fried tender aubergines, accompanied by browned, slightly caramelized onion, to which a delicate tomato purée has been added. This finely chopped mixture is seasoned with a blend of garlic, thyme, rosemary, parsley and basil, with fresh, green aromas.
“Yellow and red pepper conserve”: this consists of red and yellow peppers, with a slightly sweet flavour, which are finely chopped and slowly fried, seasoned with thyme and rosemary, with a dash of tomato, a touch of garlic and finely minced browned onions.
“Dried tomato conserve”: this consists of quartered dried tomatoes, bursting with sunshine, marinated with a drizzle of fruity wine vinegar and seasoned with a touch of garlic and milled white pepper. After they have been lightly crushed, a fine tomato purée is added.
